Brewing Up a Storm in Kalamazoo

One Well Brewing is shaking things up this summer with a major menu overhaul—and a strategic pivot into spirits. The Kalamazoo-based brewery has secured city council approval to open an off-premises tasting room, but it still awaits the final sign-off from the Michigan Liquor Control Commission (MLCC). That same governing body will also weigh in on the brewery’s application for three critical licenses:

• Small distillery license
• Mixed-drink manufacturing permit
• Additional off-site retail approval

If greenlit, these permits will allow One Well to distill its own spirits, a game-changer given Michigan’s restrictive laws. Currently, retailers like One Well cannot sell branded liquor from other producers—making in-house distillation the only path to expand their liquor offerings.

A Spirited Expansion: Whiskey, Rum, and More

The brewery has big plans for its new distillery line, with plans to craft five core spirits under the One Well label:

• Whiskey
• Rum
• Gin
• Vodka
• Agave-based spirits

While they’ll partner with established distillers for expertise, no brand names have been announced yet. But the real buzz? Clear Sky, a fruit-flavored vodka seltzer hitting the market in on-tap, cans, and take-home formats. As the founder puts it:

“You can’t just serve beer. A modern spot needs food, spirits, non-alcoholic options, and entertainment.”

This move isn’t just about staying competitive—it’s about redefining what a taproom can be.

From Quirky Beers to a Full-Spectrum Experience

Over the past decade, One Well has built a reputation for bold, unconventional brews, like:
